Crockpot Chicken Taco Chili

   Yesterday I made probably for the 4th or 5th time since November, Crockpot Chicken Taco Chili
So easy and tasty and it's one of those "no-fail" recipes which I love! 

                                                                      Ingredients:
                                         1 onion, chopped                     1-16 oz. can black beans
                                         2 sm. cans corn                        1-16 oz. can kidney beans
                                         1-8oz can tomato sauce (or 16 oz. can)
                                         2-14.5 oz. diced tomatoes with green chilis
                                         1 packet taco seasoning
                                         1 tbsp. cumin                            1 tbsp chili powder
                                         3 boneless skinless chicken breasts
                                         chili peppers (optional)           chopped, fresh cilantro (optional)

         Combine all ingredients in the crockpot, place chicken on top.  Cook high for 6 hrs.
         1/2 hour before serving, ,remove chicken and shred.  Return the chicken to the slow cooker
         and stir in.  Top w/ fresh cilantro or other toppings.

  This recipe is easy to change around; I have used 2 cans of one type of bean, only 1 can of tomatoes with chiles, a can of diced tomatoes instead of tomato sauce.  Like I said, it's "no fail".  I also cooked it for 8 hours yesterday because I was gone and it was fine.

I served this on Christmas Eve with choices of toppings:  cheese, sour cream, tortilla chips, cilantro (your choices are only limited by your imagination!)
